- I got this from an international cookbook when we lived in Indo:
- Peanut Sauce:
- 2 T oil
- 1/4 C onion, finely chopped
- 2 cloves garlic, minced
- 1 t Sugar
- 1/2 t salt
- 1/4 t ground dried chili peppers or 8 small red peppers
- 2 t grated lemon rind
- 1/2 c peanut butter
- 3/4 c coconut milk
- 3/4 c water
- Heat oil in skillet, saute onions & garlic 3 minutes, stir in peanut
- butter, sugar, salt, chili peppers & lemon rind, very gradually
- add coconut milk mixed w/ water. cool
- salad:
- lettuce or napa cabbage
- 1 c cooked sliced green beans
- 1 c shredded cabbage, cooked 5 minutes
- 2 tomatoes sliced
- 2 cucumbers peeled and sliced
- bamboo shoots
- 1 small red onion, sliced and fried
- shrimp chips (available in asian markets)
